Healthy Sticky Date Pudding
You can make this healthy sticky date pudding recipe gluten free, refined sugar free and dairy free too!
Ingredients:
- 400g goodMix bread mix
- 2 cups dates-soaked in 2 cups of water
- 2 eggs
- 50g (or 100g) of melted coconut oil (or butter if preferred)
- 3 tsp Cinnamon
- 3 tsp Vanilla essence
- 1tsp baking powder
- Pecans / walnuts to decorate
- Almond butter / maple syrup drizzle
Method:
1. Soak dates (pour hot water / cover them & leave to soften & swell - overnight or at least a few hours)
2. Preheat oven to 180 degrees fan
3. In a food processor / strong blender, blitz all the ‘wet’ ingredients together with the vanilla, cinnamon & baking powder (eggs, soaked dates mix, melted oil / butter) until a smooth, even batter forms.
4. Tip Dry mix into a large bowl
5. Tip batter / blended wet mix into dry
6. Stir quickly & thoroughly until a dough forms
7. Press dough into paper lined loaf or cake tin, bake 1 hr 20mins (or until knife inserted into centre comes out clean).
8. Optional - when almost cooked (ie after 1hr), drizzle your cake / loaf with a syrup (ie more oil / butter sweetened with maple syrup or coconut sugar - sweetener of choice).
9. Serve hot just with butter, or as a decadent dessert with coconut ice cream / coconut yoghurt & syrup, pecans or walnuts to decorate.
