
Easy Gluten Free Pumpkin Bread
This is such an easy and utterly delicious pumpkin bread recipe. If you love bread but want a much healthier version, give this a go!
Dry ingredients
- 200g goodMix bread mix (½ the small bag)
- 1/3 cup gluten free self raising flour
Wet ingredients
- 200mL water
- 25mL olive oil
- 1 egg
- 2/3 cup mashed roast pumpkin
Method:
1. Combine dry ingredients in a bowl.
2. Shake wet ingredients well (in a shaker bottle)
3. Add wet ingredients to dry, mix until evenly combined.
4. Bake 1hr 20mins or until crusty brown on top & a knife inserted into centre comes out clean. Allow to cool a little before slicing.
Serve warm with butter & cinnamon, or allow to cool & use as normal bread / toast etc.
