
Apple and Cinnamon Muffins - Gluten Free, Lower Carb
Who doesn't love a muffin? But most are full of sugar and offer little nutritional value. Not these Apple and Cinnamon Muffins! They're a healthier version of a favourite sweet treat!
Ingredients:
- 400g bread mix
- 1/2 cup coconut flour
- 3 cups grated apple (red or green)
- 4 tsp of cinnamon
- Good splash of vanilla essence
- 3 heaped tbsp coconut sugar (or adjust to your preferred sweetness)
- 200mL water
- 3 eggs
- 50mL melted butter (or olive or coconut oil)
Method:
- Pre heat oven (180-200 degrees fan)
2. Grate apples
3. Tip Bread Mix into a bowl with other dry ingredients (coconut flour, coconut sugar & cinnamon)
4. In a shaker bottle, shake up all wet ingredients until frothy / aerated (water, eggs, melted butter or oil, vanilla essence)
5. Pour wet ingredients into bowl & mix immediately until well combined, then leave to thicken (1-2 mins)
6. Spoon doughy mixture into silicone muffin trays & press down firmly.
7. Decorate with small slices of apple pushed into top of each muffin
8. Bake 180-200 degrees - 45-60 mins (or until brown & crusty on top, but a knife inserted comes out clean.
9. Serve hot with vanilla coconut yoghurt / ice cream for a not-so-naughty dessert, pack in your lunchbox for morning / afternoon tea, or enjoy anytime with a cuppa! (Can be made as a loaf also).
