Healthy Gluten Free Brownies
Ok - you asked for it! A recent Facebook enquiry “I’m currently eating brownies for breakfast but wanting to get healthier, is there a Blend11 Brownie recipe?” (Ok we’ve all been there - esp in that pre-period week, so this ‘anytime’ brownie recipe is perfect for storing in the freezer ready for ‘that week!’)
It’s gluten free, refined sugar free (depending on the chocolate you use), & supplies loads of fibre, polyphenols & resistant starch for a healthier gut microbiome (to help you decrease those sugar cravings!)

Ingredients
750g Bliss Ball Mix
1 cup of pre-soaked / activated Blend11
2 eggs (beaten with a fork)
200g melted dark choc (or whatever choc you prefer)
Directions
1. Place Bliss Ball Mix & pre-soaked Blend11 into a large pot (heat on very low / warm). This will make the Ball Mix soft & easy to combine / squash together with the moist Blend11.
2. Add the beaten eggs & melted chocolate, mix until evenly combined into a choc ‘dough’ consistency.
3. Roll dough out flat to a thickness of approx 7-10mm (anywhere between half a cm & a full cm thick will work). Just use baking paper on top & bottom of dough to prevent sticking.
4. Bake for 20mins in a preheated oven (170 degrees fan); then turn oven down to 80 degrees & slowly bake / dry out for another 40-60 mins, or until it reaches the texture of a chewy in the middle but crunchy on the surface brownie.
5. Slice into brownies or bars or squares & store in the fridge (up to 1 week) or freezer (6mths).
6. Serve with coconut ice cream or yoghurt for dessert, unsweetened yoghurt for breakfast, or pack in your lunchbox for morning or afternoon tea!
