Fruity Lime & Apricot Slice (GF, Grain Free)

Creamy zesty topping with a sweet fruity chewy base, this is perfect for when you just wanna eat ‘lollies’ (but really don’t wanna eat processed crap)! Great to have in the fridge / freezer for a sneaky chew that feeds your good gut bugs with diverse fibre, & provides a protein & collagen hit. 

  

Ingredients:

Base
- 1 cup dried apricots
- 2 cups Blend13
- 2 Tbsp maple syrup or honey
- 1/2 cup melted coconut oil
- 1/2 cup almond meal
- 2-3 TBSP vanilla or unflavoured protein powder (depending on how sweet you like it). Unflavoured will be more plain, vanilla obviously more sweet & vanillary!

 

Topping
- 200g raw cashews
- juice of 2 limes
- 2 heaped TBSP coconut oil (melted) 
- 2 TBSP maple syrup
- 2 TBSP unflavoured collagen powder 

  

Method: 

1. Blend all of the base ingredients & then the topping ingredients (separately) in a quality food processor or blender. Note - if you do the topping first, there’s no need to rinse the container. 
2. Press the base mixture down into a paper lined tray / shallow plastic container. Make sure it’s firmly compacted down (use another layer of paper on top & compress / smooth it down with your hand or the back of a spoon.
3. Spread the creamy topping over the base with a spatula.. 
4. Place slice into the freezer until firm enough to slice easily (approx 20 mins). 
5. Slice up into pieces & store in a sealed container, with baking paper between layers to prevent sticking. (Store in the freezer for longer term, or in the fridge for up to 5 days).
