Savoury Pumpkin Hot Cross Buns
A modern goodMix twist on an old Aussie classic - pumpkin scones.
Ingredients:
- 1x 400g packet of Burger Mix
- 400g of roasted pumpkin (weigh it roasted, not raw).
- 150mL water
- 50mL olive oil
- 1.5 tsp baking powder
- 1/2 a red capsicum or sweet chilli or shallots or chives or squeezy tomato paste for the crosses. (Or just leave them off when it’s not Easter!)
- Olive oil to spray (if desired) before air frying (for that extra golden crispy outside!)
Directions:
1. Mix / mash burger mix, water, olive oil pumpkin & baking powder together using a fork in a bowl until even consistency.
2. Leave to sit overnight in the fridge, (or min 3 hours on the bench).
3. Form into balls & place in air fryer tray (touching each other) on a sheet of baking paper.
4. Bake until golden brown on one side (they should look puffier / slightly risen). (Approx 180 degrees 20mins, but monitor closely).
5. Flip once the top is golden brown.
6. Serve with lashings of butter or avocado, maybe some relish or chutney, goats feta…. ooh wait you could even encase a lump of feta or Parmesan inside the ball before air frying
