Sweet Potato Brownies with Chocolate Ice Cream? Yes Please!!! Who would have thought these would be so super-fudgey, especially being naturally sweetened, made with veggies, & much healthier than your regular brownies!
Ingredients
1 cup of roasted sweet potato
2/3 cup of Maple Syrup
1/4 cup Coconut Oil
3 T Almond Butter
1 tsp Vanilla Essence
1/2 Cup of Raw Cacao Powder
A good pinch of salt
2/3 Cup G.F. Flour
1/4 Cup of Almond or Coconut Milk
Topping
Sprinkle with Blend13
Drizzle with some melted dark chocolate
Sweet Potato Brownies Method
Put all ingredients in a food processor until you get a good fudgy batter leaving flours last. I added more milk until I got the consistency I wanted.
Bake in a 170c oven for around 30 minutes
Sprinkle / drizzle with toppings, then we added a scope of plant-based ice Cream - so yum 😋
