Carrot Cake Balls

These are awesome for little ‘dessert bites’ or for a morning / afternoon tea platter, when you’re catering for anyone with dietary needs i.e. GF, dairy free, refined sugar free, vegan, or for getting some sneaky fruit & veg into fussy kids. They are just like a delicious mouthful of carrot cake! You can make a big batch & pop into jars for gifts too.

Ingredients

1 x fruity BallBag 750g
Juice of 1 orange
2 cups of grated carrot
2 tsp of cinnamon
1/2 tsp of nutmeg
1/2 cup of walnuts
1/2 cup of desiccated coconut

 

Method:

Combine all ingredients in a bowl & mix / squeeze together well using hands.
Leave to sit for a few mins until fully softened & easy to roll into balls.
Shape, roll in coconut & place in the freezer.
Serve chilled (take out of the freezer a while before serving).

Serves Approx

40ish Balls – obviously depending on size!
