Blend11 Pancakes

A delicious gut-friendly breakfast that tastes delicious!
Gluten free, dairy free and sugar-free.

Ingredients

3/4 cup buckwheat flour
1/2 cup activated Blend11
1/2 cup nut milk
1 medium banana, mashed
1 egg, whisked
1 tbsp honey
1/2 tbsp baking powder

Method

1. Combine all wet ingredients, except for the Blend11, in a medium mixing bowl
2. Slowly stir through flour and baking powder
3. Finally, mix through activated Blend11
4. Heat large fry pan with a teaspoon of coconut oil (Medium heat)
5. Add two tablespoons of pancake mixture into a pan per pancake. You can cook about 3 at a time in a large pan
6. Cook on one side until bubbles appear. Then flip and cook for a further 1-2 minutes.
7. Once cooked through, move to a separate plate ready to serve.

Serve as a stack with Pure’N’Free coconut yoghurt and fresh fruits.

Pretty Pink Polyphenol Smoothie Bowl

I thought it would be a bit wrong adding red wine to a smoothie bowl, so have chosen some more ‘morning friendly’ polyphenol antioxidant sources to construct this pretty pink Blend11 smoothie bowl!

Cacao, berries & pomegranates are some of your best (& yummiest) sources of gut-supporting, heart-healthy polyphenol antioxidants!  This gluten free, dairy free smoothie bowl is full of them! Added bonus = a serve of activated Blend11 (Low FODMAP, diverse fibre, live enzymes, good fats, plant protein & loads of nutrition). The perfect pretty-pink Mother’s Day brunch – get the recipe & invite some fellow mums over! They might even stay for a red wine later 😉

Ingredients

  • 1 cup of organic frozen strawberries piled high (mixed berries will work too )
  • 2 bananas
  • 2 tsp of vanilla essence
  • 2/3 cup of Pure n Free coconut yoghurt (in naturally sweetened or unsweetened depending on your taste/mood/diet goals – both will work well).
  • 1/4 cup of kefir (dairy or coconut)
  • Scoop of plain, vanilla or berry protein powder (optional extra, not required)
  • 100g of melted dark choc (sugar-free, dairy-free options are available from health stores) to make decorative chocolate leaves
  • 1/2 cup of activated Blend11 to top your bowls with
  • Extra berries (just a few extra blueberries, strawberries, raspberries, blackberries – whatever you have, plus 1/2 a Pomegranate to decorate).

Method

1) Melt the dark chocolate in a double pan.
2) Drizzle melted chocolate into leaf shapes (use a spoon to drizzle onto baking paper) hint: if it’s hot weather, line a baking tray with the paper & keep it in the freezer for 10 minutes prior to doing this).
3) Add everything else into your blender (except the Blend11 & the extra berries & pomegranate needed to decorate). Blend until smooth. Store in the fridge until mum/s are on the way over.
4) When you’re ready to serve up, just pour the smoothie into wide bowls, top with 2 tbsp of activated Blend11, berries, pomegranate & your dark chocolate leaves from the freezer.

Apple and Carrot Blend11 Crumble

This apple and carrot crumble is a deliciously warming breakfast or dessert option for the warmer mornings and evenings. Plus, it’s got vegetables in it – so it’s a win!

Ingredients

Base:
– 1 apple diced
– 1/2 carrot grated
– 1 tbsp coconut oil
– 1 tbsp honey

Crumble:
– 1/2 cup Blend 11
– 1 tbsp coconut oil
– 1 tbsp honey

Method

Pre-heat the oven to 180 degrees.
Combine the ingredients for the Base in a baking dish.
Bake in the oven for approx. 10-15 minutes.
Mix ingredients for Crumble in a separate bowl and then spread over the top of the cooked Base ingredients.
Cook until the top is golden brown (approx. 5-10 mins)
Remove from oven, allow to cool for a few minutes before serving with Pure N Free coconut yoghurt.

Cinnamon Mocha Smoothie

 

Creamy mocha-vanilla-cinnamon yumminess, nutritious pre & probiotic healthiness plus some coffee perkiness!

Ingredients

Ingredients

Activated Blend11 – 1/2 cup
Almond milk (or your fave milk) 1 cup
Banana – 1 large, just ripe (too ripe & your smoothie will taste too ‘banana-ry’)
Cold brew coffee 1/3 cup (or more or less, add to your own taste & caffeine requirement!)
Natural coconut yoghurt 1/2 cup
Chocolate mousse coconut yoghurt – 1/2 cup
Kefir (a few tbsp)
Vanilla essence – 3 tsp
Cinnamon – approx 2 tsp (plus a little extra to sprinkle on top if you wanna get fancy)
Brazil nuts (or walnuts) handful
Ice – 1.5 cups

Method

Just chuck it all into your blender & press go, buzz on high until it’s smooth & creamy. Pour into glasses & top with cacao nibs & cinnamon to make them look pretty, or just straight into a shaker bottle & you have a nourishing breakfast (& coffee) ready to head out the door. This recipe makes a 2-3 good sized smoothies, so adjust qty’s to suit if it’s just for one person – you can also pour any excess into ice-block moulds to make a supply of yummy mocha icy-poles, perfect for morning / afternoon tea on hot days!

NeoBlend CocoBerry Brunch

Perfect to prepare the night before, this gluten free, grain free brunch in a jar is the perfect portable meal for those wanting to break their fast with something nutritious a little later in the day.

Ingredients

50g NeoBlend
Water to almost cover Neo
Natural unsweetened coconut yoghurt (Pure n Free is our fave)
Blueberries
Raspberries
Blackberries
Cinnamon

Method

1. Pour some dry NeoBlend (or Blend11) into a jar.
2. Add water, almost to the same height as seeds (fully moisten, don’t have them drowning).
3. Layer with coconut yoghurt, berries & cinnamon.

4. Refrigerate overnight (covered / lid on), ready to take with you in the morning.

1 hungry late breakfast eater!

Breakkie-brunch Jars.

Healthy breakkie on top, morning tea treat on the bottom. You can eat the top for breakfast, then screw the lid back on & keep the bottom for morning tea! Make a few of these on Sunday evening, ready to start the work week off with breakfast & morning tea sorted! Or maybe these could be your perfect ‘post-workout jars’?

Ingredients

Dessert base: (goes in first).
Pure n Free Salted Caramel or Chocolate Mousse coconut yoghurt
Vegan or Whey BallBag mixture (or crumbled up balls / slice)
Banana slices

Breakfast top: (on top of the sweeter stuff).
Activated Blend11 (approx 2 tbsp or whatever amount feels best for you)
Natural unsweetened yoghurt (natural greek or coconut)
Mixed berries (strawberries, raspberries, blueberries etc)

Method

Into clean jars place your ingredients, layered so the sweet layer goes in first & breakfast layer on top.

Banana Caramel Porridge Bowl

Such an amazing winter combo, the pecan-caramel-banana-cinnamon yumminess on top of the right breakfast foundation of slow carbs, diverse fibre, plant protein & loads of good fats.

Ingredients

Oats 1/2 cup
Buckwheat groats 1/2 cup
Water 1.5 cups
Vanilla Essence – splash
Sea Salt – pinch
Cinnamon – to taste
Banana – 1/2 per person
Pecans – handful
Blend11 – 1 tbsp activated mix per person
Pure n Free Coconut yoghurt (Natural & Salted Caramel), heaped tbsp of each

Method

  1. At night (or anytime the day before your planned porridge breakfast extravaganza) place your oats & / or buckwheat groats into a saucepan – you can do all oats, all buckwheat or a combo. Fully cover with boiling water, plus a bit extra – the groats will drink it all up.
  2. Add some vanilla essence (a good splash), plus a pinch of good salt. Put the lid on.
  3. Wake up, give it a stir & add more water if it’s all gone, then turn the stove on low to heat up, stirring until it looks good enough for goldilocks (you may need to add a little more water as you go).
  4. Serve a dollop into your bowl, plus a dollop each of Pure n Free Natural & Salted Caramel coconut yoghurts.
  5. Top with chopped banana, cinnamon & pecans.

Serves Approx

Depends – you can just put any leftover porridge back in the fridge for the next day, & the next day, & the next day (best to do up a big pot so breakfast can be quick each morning, & less prep!)

Super Seedy Bircher

This bircher recipe is so quick and easy and perfect for a quick brekkie before work! I combine it with oats as I love the creamy texture and taste but you can omit them if you like and add more of the good mix! I find this breakfast easy to digest and keeps me sustained until lunch.

Ingredients

– 2 tbs rolled oats

– 1/2 cup blend11

– 1/2 cup freshly made almond milk

– 1/4 grated green apple

– 1 tsp cinnamon

– 1 tsp honey

– 2 tbs greek yoghurt

– fresh berries/other fruit

– nuts (e.g. almonds, walnuts etc.)

Method

  1. Soak the seeds and oats in the almond milk overnight
  2. In the morning mix in the grated apple, yoghurt, cinnamon and honey and top with fruit and nuts of choice!

– 1 cup unsweetened almond milk
– 2/3 cup frozen of fresh mixed berries
– 2/3 cup frozen or fresh mango
– 1 large handful of baby spinach leaves
– 1 heaped tsp maca powder

– 1 heaped tbs coconut kefir or yogurt

– 6-10 ice cubes

Method

1. Blend until smooth.

Overnight B11 Oats

Overnight oats are a ground breaking discovery for anyone who needs an easy breakfast on the go! Just mix all your ingredients in a jar, refrigerate overnight and grab and go in the morning.

Ingredients

– 2 tbsp of Blend11
– 1/3 cup of quick oats
– 1 tsp raw maca powder
– 1 tsp of almond butter
– 1/2 cup of milk of choice, we used coco-almond milk

Topping Ideas:
– sliced banana & cacao nibs
– sultanas & peanut butter
– apple & cinnamon

Method

1. Add all ingredients to a jar
2. Place a lid on and SHAKE!
3. Refrigerate overnight
4. In the morning, add some toppings (optional)

Chocolate Crunch Pondy Banana Nice Cream Bowl

I scream, you scream, we all scream for green ice cream! This creamy green banana nice cream goes perfectly with crunchy chocolate buckwheat clusters. Packed full of superfoods with the added boost of PondWater, our very own SuperGreen’s powder this recipe is sure to be your new favourite treat!

Ingredients

Chocolate Buckwheat Crunch

– 1 cup buckwheat, soaked overnight in water and a small splash of apple cider vinegar(8 hours)
– 2 tsp hemp seeds
– 2 tsp cacao nibs
– 1 tsp maca powder
– 1 tsp cacao
– 1 tbsp coconut oil
– 1 tbsp of rice malt syrup
– Pinch of cinnamon
– Pinch of vanilla powder (or essence)

Banana Nice Cream

– 3 small frozen ripe bananas
– 1/4 cup of almond milk
– 1 tsp of PondWater SuperGreen’s powder

Method

1. Preheat oven to 150 degrees
2. Mix all buckwheat crunch ingredients together
3. Line a baking tray with baking paper
4. Spread out the mixture leaving a few sections clumped together
5. Bake in oven for around 90 minutes, checking regularly or until mixture is dry to touch
6. Add all nice cream ingredients to a high speed blender or food processor and blend until smooth
7. Pour nice cream into a bowl and sprinkle buckwheat clusters on top
